As soon as you’re faced with any type of health issues, one of the very first things you start to think about and reassess is your diet. These days, the foods I select for my family and I to consume has changed considerably over the past few years, all because of our health.
I have learned, however, that selecting quality, healthy food takes a lot of time, preparation and money. It even makes it very difficult when you are not able to purchase all groceries in one place; ultimately making discouraging me to adhere to a healthy regime.

A wonderful box of fruit and vegetables arrived (along with a slimy stowaway that hitched a ride-see image above) and I was thrilled with the colours and scents of the produce. I could immediately tell there was a difference from what I usually bought.
From a simple bunch of chard came the most tasteful warm salad I had had in a long time. I gently sautéed the beautiful green leaves until they were slightly wilt but still crunchy. Once they were ready, I drizzled some olive oil and seasoned with salt and pepper – I never expected a plate of greens to taste so good.
After learning about Henry, his chronic kidney disease and R being tested to be the potential kidney donor, she was so very helpful in sending over some beautiful dandelion. Yes, I know what you are thinking – it’s a weed, sure, but it’s also a natural diuretic with numerous health benefits, especially for the kidneys and urinary tract.
So I made some tea. R loved it.
We loved our fresh orange juice, and hot lemon teas as well all our roasted eggplant, carrot soup and walnut and apple coleslaw made with the cabbage.
